wow…2 batches of cookies in 1 weekend…

these are “lactation cookies”. meant for moms who are breastfeeding. but if you are not breastfeeding or even a mom, you can still eat them. and surprisingly they are pretty good! i think i might even like them better than the nutella cookies. and don’t worry, boys can eat them too. i tested it on boyrobot and friends and noone started lactating. :)

lactation cookies

1 Cup Butter
1 Cup Sugar
1 Cup Brown Sugar
4 Tbs Water
2 Tbs Flaxseed Meal
2 Eggs
1 tsp Vanilla
2 Cup Flour
1 tsp Baking Soda
1 tsp Salt
3 Cup Thick Cut Oats
1 Cup Chocolate Chips
2 Tbs Brewers Yeast

Preheat oven to 375. Mix 2 Tbs of flaxseed meal and water, set aside 3-5 minutes. Cream butter and sugar. Add eggs, stir flaxseed meal into butter mixture then add vanilla. Beat until well blended. Sift dry ingredients (except oats and chips) Add butter mixture to dry ingredients. Stir in oats then chocolate chips. Drop rounded spoons onto baking sheet and bake 8-12 minutes.

i don’t really remember the last time i made cookies from scratch….

but i seriously couldn’t have picked a better recipe to start baking with. you can’t tell from this picture but the middle of this cookie is a layer of nutella and it is oh so good. by the way, i think i put the rack too low in the oven causing these cookies to be thinner than usual and not as pretty as your normal cookie. i told you i haven’t baked in awhile!! oh well, they still tasted yummy!

nutella chocolate chip cookies

Ingredients
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup butter (1 stick)
1 cup sugar
1/2 cup brown sugar
2 eggs
1-1/2 teaspoon vanilla
1/4 cup Nutella
1-1/2 cups chocolate chips

Directions

1. Preheat the oven to 375 degrees and prep baking sheets with silpats or parchment paper.

2. In a large bowl whisk together the flour, baking soda and salt.

3. In the bowl of an electric mixer, cream the butter, the sugar and the brown sugar. Add the eggs and the vanilla until combined.

4. Gradually add the flour until the mixture is combined.

5. Then mix Nutella. Finally add in the chocolate chips.

6. Use ice cream scoop and drop on baking sheets and bake for 8-10 minutes.

irresistable irish soda bread (from allrecipes)

Ingredients
3 cups all-purpose flour
1 tablespoon baking powder
1/3 cup white sugar
1 teaspoon salt
1 teaspoon baking soda
1 egg, lightly beaten
2 cups buttermilk
1/4 cup butter, melted

Directions
Preheat oven to 325 degrees F (165 degrees C). Grease a 9×5 inch loaf pan.
Combine flour, baking powder, sugar, salt and baking soda. Blend egg and buttermilk together, and add all at once to the flour mixture. Mix just until moistened. Stir in butter. Pour into prepared pan.
Bake for 65 to 70 minutes, or until a toothpick inserted in the bread comes out clean. Cool on a wire rack. Wrap in foil for several hours, or overnight, for best flavor.

neat trick: you can substitute 1 tbsp white vinegar + enough milk to make 1 cup = buttermilk.

i also forgot the baking POWDER. yes, recipe calls for soda and powder. i’m getting old.

but it still turned out great! my coworkers loved it. i loved it. the loaf pan is empty. success!!!!!!!!!

ps. the reviewers keep harping about adding raisins to it but nosiree. no raisins in mine. i am anti-raisins. but pro-blackberry jam. delish.
